An allergy is an overreaction of the immune system to a substance that harmless to most people. But for someone the body immune system treats the substance as an invader and overreacts causing symptoms that can range from annoying to any serious conditions. In an attempt to protect the body, the allergic person immune system produces antibodies called immunoglobulin-E (IgE). Those antibodies then produce mast cells and basophiles (allergy cells in the body) to release chemicals (including histamine) into the bloodstream to defend against the allergen invader. It's the release of these chemicals that causes allergic reactions affecting a person's eyes, nose, throat, skin, lungs, or gastrointestinal tract as the body attempts to rid itself of the invading allergen. Further exposure to that same allergen will trigger this allergic response again. This tells that every time the person eats that particular food or is exposed to that particular allergen, there will have an allergic reaction.
Allergies can be seasonal that happens only at certain times of the year like when pollen counts are high or can occur any time someone comes in contact with an allergen. Previous treatment and management of allergies consisted simply of avoiding the allergen in question or otherwise reducing exposure. Like people with cat allergies were encouraged to avoid them. While avoidance of allergens may reduce symptoms and avoid life-threatening anaphylaxis, it is difficult to achieve for those with pollen or similar air-borne allergies. Nonetheless, strict avoidance of allergens is still considered a useful treatment method, and is often used in managing food allergies.
